Variations W/ vegan low-carb zucchini tortilla:
Breakfast Taco: Add scrambled paneer/tofu or egg and cheddar cheese, microwave for 30 seconds until the cheese is melty. Serve with your favorite keto sauce.
Lunch Quesadilla: Add grilled mushrooms and mozzarella cheese, and fold the tortilla like a quesadilla. Cook each side on a skillet until the cheese melts and the tortilla browns a little. Serve it with sour cream.
Dinner-time Loaded Taco: Pre-cook cauliflower, zucchini cubes and mushrooms with balsamic herb marinade. (You can either grill it or sauté) Add pre-cooked Mexican cauliflower rice, cooked/grilled veggies to each taco and load it with shredded lettuce, cheese and sour cream. Serve it with chipotle or tomatillo sauce.

Made from flaxseed flour, these tortillas are nutrient rich and flavorful. Make the dough in advance and prepare flatbread whenever you want. You can make pizzas, wraps or eat it plain with some keto curries. Again, the choice is yours.
