1.Zucchini Taco: 

This is a very versatile recipe, which you can incorporate in your breakfast, lunch or dinner. Use these fiber-rich, super low-carb tortillas for making a vegetarian breakfast taco or a lunch-time quesadilla or a dinner-time loaded taco. The choice is all yours.

Make these yum, vegan low-carb zucchini tortillas/rotis just under 45 minutes. Enjoy these with your favorite curries or make soft tacos with your favorite protein. Keep a huge batch ready because these are really addictive.

Variations W/ vegan low-carb zucchini tortilla: 

Breakfast Taco: Add scrambled paneer/tofu or egg and cheddar cheese, microwave for 30 seconds until the cheese is melty. Serve with your favorite keto sauce.

Lunch Quesadilla: Add grilled mushrooms and mozzarella cheese, and fold the tortilla like a quesadilla. Cook each side on a skillet until the cheese melts and the tortilla browns a little. Serve it with sour cream.

Dinner-time Loaded Taco: Pre-cook cauliflower, zucchini cubes and mushrooms with balsamic herb marinade. (You can either grill it or sauté) Add pre-cooked Mexican cauliflower rice, cooked/grilled veggies to each taco and load it with shredded lettuce, cheese and sour cream. Serve it with chipotle or tomatillo sauce. 

2. Keto Paratha or Flatbread:

Made from flaxseed flour, these tortillas are nutrient rich and flavorful. Make the dough in advance and prepare flatbread whenever you want. You can make pizzas, wraps or eat it plain with some keto curries. Again, the choice is yours.

Variations W/ Keto Flatbread/Wrap:

Pizza: Add a tablespoon of sugar-free marinara sauce and ¼ tsp of Italian seasoning. Now add sliced or shredded mozzarella and basil leaves. Season with salt. Cook covered on a cast iron skillet in low heat, until the cheese is melty. Cut and serve immediately. 

Keto Flax Paratha
These are quick, super-easy and freezable. My low-carb keto flax paratha just requires three ingredients and some optional ones if you need a spicy and yum Indian-style paratha.

3. Keto Spinach Soup:

If you’re an Indian, you know what a kadhi soup means. For us Indians, it’s one of the most comforting meal in itself. But, unfortunately, it’s not very keto-friendly. That’s why I have this keto spinach kadhi soup for you, which strongly mimics the original version and tastes great with keto rice aka cauliflower rice.

This recipe is one of my family favorite and a meal in itself. I often eat these with a bowl of coconut-milk cauliflower curry or spicy tomato curry. The recipe stuffing uses broccoli and nuts, but you can always use cauliflower, nuts, sesame and even herbs of your choice. 

BONUS TIP: Make these in triangular shape and you will have some keto samosas.
