Ingredients For the Recipe

To make the vegan ham and potato soup, you’ll just need a few simple ingredients.

  • Oil: 1 tbsp
  • Carrots (chopped): ¼ cup
  • Onions (chopped): ½  an onion
  • Potatoes (boiled and cubed): 1 cup
  • Vegan ham (chopped): ½ cup
  • Salt: ½ tsp
  • Pepper powder: ½ tsp
  • Mixed herb seasoning: 1 tsp
  • Chili flakes: ½ tsp
  • Vegetable broth: 1.5 cups
  • Vegan cheese: ¼ cup
  • Spring onions (chopped): For garnish
  • Parsley (chopped): For garnish

How to Make the Vegan Ham and Potato Soup

Got everything ready? Here’s what you’ll need to do to make the soup. 

Heat oil in a deep bottomed vessel.

Add the carrots, onions, and potatoes. Saute. Stir for 2 minutes.

Next, add in the vegan ham and saute. Stir for 3-4 minutes.

Add the spices and salt next and mix.

Pour the vegetable broth and let it come to a boil. Let the mixture simmer for 5 minutes.

Next, add in the vegan cheese and mix well. Let the mixture simmer for 2 minutes.

  • To add some extra flavor to the soup, I would recommend adding celery too. The combination of celery, carrots and onions together in a soup is nothing short of mindblowing. 
  • Chopped or minced garlic is another great addition to the soup, and can lend it a beautiful umami flavor. 
  • To make this vegan ham and potato soup thicker, add half a teaspoon of flour into it while you saute the veggies, and then add the stock in. 
  • Another great way to get that deliciously thick and creamy soup without having to add in any dairy is to use mashed potatoes instead of potato cubes.
  • You can choose to cream the potatoes evenly using an immersion blender for best results. 
  • If you prefer to use potato cubes, I would recommend using red potatoes if you’re able to get your hands on them. They can really make a huge difference in the flavor. 
  • Chopped mushrooms or mushroom powder can be another wonderful aromatic addition to the soup.
