Ingredients For the Recipe

You’ll need 2 sets of ingredients to put this easy oven roasted poha chivda together. 

For the spicy nuts mixture

  • Oil: 2 tbsp
  • Peanuts/Groundnuts: ½ cup
  • Almonds (halved): ½ cup
  • Sesame seeds: 5 tbsp
  • Watermelon seeds: 5 tbsp
  • Curry leaves: ¼ cup
  • Turmeric powder: ½ tsp
  • Red chili powder: 2 tsp
  • Salt: 1.5 tbsp

For the Chidva

  • Flattened rice: 2 cups
  • Prepared spicy nuts mixture

How to Make the Oven Roasted Poha Chivda

Once you have all your ingredients ready, here’s what you’ll need to do to make the chivda. 

add oil, peanuts and almonds in a pan and saute

Heat oil in a pan. Add the peanuts and almonds and saute. Cook for 3-4 minutes.

add sesame and watermelon seeds to the peanuts and mix well

Next, add the sesame seeds and watermelon seeds. Saute and cook for 1-2 minutes.

Add the curry leaves and saute.

add powdered spices to the pan and saute

Add in the powdered spices next and mix well.

Cook the nuts mixture until the nuts turn crunchy.

Next, preheat the oven to 180℃ for 5 minutes.

Spread the flattened rice evenly on a baking tray. Bake them in the oven for 5-7 minutes at 180℃ or until they turn golden brown in color.

Once the flattened rice is ready, transfer it to a mixing bowl. Add in the spicy nuts mixture and mix well.

What Else Can I Add to the Oven Roasted Poha Chivda?

This version of the poha chivda calls for the use of some basic pantry staples, but you can, of course, take it up a notch and try adding in some more of your favorite ingredients. Most nuts and seeds work wonderfully with this recipe, so you can go ahead and experiment.

Can I Make the Chivda Without the Oven?

You sure can! Traditionally, the flattened rice and other ingredients are deep fried until they’re crunchy, but considering the fact that this practice isn’t exactly healthy, we’ve come up with this oven roasted version.

Yes, you can! When stored correctly, this oven roasted poha chivda can stay fresh for up to 10 days, if not more. Just remember to use an airtight container to store it.
