Ingredients For the Recipe

To make these high fiber oats pancakes with the omelet, you’ll need these simple pantry staples. 

For the omelet

  • Eggs: 2
  • Onions (finely chopped): ½ onion
  • Green chilies (finely chopped): 1 tbsp
  • Red chili powder: ½ tbsp
  • Salt: 1 tsp
  • Coriander leaves (chopped): 2 tbsp
  • Oil: 1 tsp

For the oats pancakes

  • Oats powder: ½ cup
  • Leftover vegetable juice pulp: 1 cup
  • Red chili powder: 2 tsp
  • Salt: 1 tsp
  • Garam masala: 1 tsp
  • Green chilies (finely chopped): 1 tbsp
  • Coriander leaves (chopped): 2 tbsp
  • Water: As required

How to Make the Oats Pancakes with Omelet

Once you have all your ingredients ready, here’s what you need to do.

For the omelet, add all the ingredients in a bowl and mix.

For the oats pancakes, add all the ingredients except water and mix well. Add water little by little and make a paste of flowy consistency.

For the omelet, heat the oil in a pan and pour half the mixture. Cook one side for 30-40 seconds and flip the omelet and cook the other side for 30-40 seconds. You can make the second omelet similarly.

Next, for the pancakes, pour a ladle full of the mixture onto a non-stick pan. Cook for 1 minute.
