Ingredients For the Recipe

To make the egg bhurji sandwich, you’ll need just a handful of pantry staples and seasonings.

For the Egg Bhurji

  • Oil: 1 tbsp
  • Red, green, yellow bell pepper (finely chopped): 1 cup
  • Onions (finely chopped): ¼ cup
  • Turmeric powder: A pinch
  • Red chili powder: 1 tsp
  • Garam masala: 1 tsp
  • Salt: 1 teaspoon or as per taste
  • Eggs: 2
  • Coriander leaves (finely chopped): 2 tbsp

For the sandwich assembly

  • Breads slices (cut into 2 triangles and toasted): 4
  • Mayonnaise (flavored or plain): As required
  • Prepared bhurji

How to Make the Egg Bhurji Sandwich

Once you have your ingredients ready, here’s what you’ll need to do to make the sandwich.

Heat oil in a pan. Add in the bell peppers and onions and saute. Cook for 2-3 minutes until the bell pepper starts to soften.

Next, add in the powdered spices and mix well. Cook for 1 minute.

Break in the eggs next and mix them well. Cook for 2 minutes or until the eggs are completely cooked. Break them into small tiny pieces.

Add the chopped coriander leaves and mix well.

take toasted bread and apply mayonnaise over it

Now, take the toasted bread triangle and apple mayonnaise of your choice.

top it up with bhurji

Top it with the prepared egg bhurji. Close the sandwich with the other half of the slice.
