Ingredients For the Recipe

To make these high fiber banana stem chips, you’ll need just a handful of simple ingredients.

  • Corn flour: ¼ cup
  • Rice flour: 4 tbsp
  • Whole wheat flour: 4 tbsp
  • Turmeric powder: ½ tsp
  • Red chili powder: 1 + ½ tsp
  • Black pepper powder: 1 tsp
  • Salt: 2 tsp
  • Banana stem (batons): 2 cups
  • Mustard oil: For frying
  • Chaat masala: 1 tbsp

How to Make the Banana Stem Chips

Once you have all your ingredients ready, here’s what you’ll need to do to make these crispy chips.

In a mixing bowl, add the corn flour, rice flour, and whole wheat flour.

Add in turmeric powder, black pepper powder, salt, and just 1 teaspoon of red chili powder. Mix all well.

Next add in the banana stems and coat them well with the powdered mixture.

Next heat oil for frying. Fry the coated banana stems until they turn golden and crisp.

Next, take another mixing bowl and add in ½ teaspoon of red chili powder and chaat masala.

Add the fried banana stem batons and mix well with the red chili and chaat masala mixture.

For this recipe, we’ve used some classic, no fail seasonings and spices. You can bring about a bit of variation and experiment with other spice mixes if you want to.

Tips & Tricks to Make the Banana Stem Chips

While making these banana stem chips is super easy, you might want to have these little tips and tricks handy to really get those flavors and textures right. 

  • The mustard oil is what lends these chips a nice earthy flavor. If you don’t have mustard oil, you can use any other regular cooking oil of your choice. 
  • The rice flour, corn flour and whole wheat flour come together to make a nice coating for the fries. If you don’t have any one of these, you can skip adding them too. 
  • Banana stems can be tough to cut. Remember to use a sharp knife and cut the stem in batons that are nearly equal in size to ensure that they are all cooked at the same time. 
  • When deep frying these banana stems, it is always best to keep the heat medium-low. This will ensure that the batons are well cooked from within, and don’t just end up browning from the outside. 
  • If you don’t have the chaat masala that this recipe calls for, you can use any other masala or seasoning mix of your choice. 
  • If you want to enjoy some extra crunchiness, you can cut the banana stems in small, thin strips instead of batons.
