Vegan Keto Gingerbread Latte:
As much as I love the idea of vegan low-carb, I hate to say that it is close to obscure to find the exact alternatives to every carb-rich recipes. And when the holiday season/winter sets in, my heart and mind always crave for that little extra pinch of sweet in everything. That’s why, ladies and gentlemen, this vegan keto gingerbread latte. If you are not coffee/caffeine lover in any way, make this with freshly brewed black tea and you will have a cup of gingerbread tea latte in its best vegan and keto version.
Keto+Vegan latte:
When you decide to embrace a strict diet, either for health, environment or ethics, everything begins to change around you. While physical changes may not be that evident in the beginning, but you’ll see a shift in energy and boost in mood from the very first day. That’s the magic of plant-based food. And, low-carb/keto versions certainly make it more guilt-free when you know for the fact that your cup of vegan keto gingerbread latte is healthy and well under 40 calories without an extra dollop of cream.
Add some MCT oil, or mix in a scoop of protein power for an extra punch of ketoness, or just leave it as is and enjoy this lighter version that still falls under the keto guidelines and vegan eating.
As you witness the change within you, you get more inspired to try new things and share your love for food with others. While some experience a dramatic chnage or maybe schism in their family's food habits, someone like me celebrate that small little step and perspective for choosingsuch eating/lifestyle. Recipe of Vegan Keto Gingerbread Latte:
Step-1: Brew Coffee/Tea
- In a sauce pan, add a cup of water and bring it to boil.
- Add in fresh ginger slices, ¼ teaspoon ginger powder, two pods of cardamom, ½ teaspoon of nutmeg, ¼ teaspoon of cinnamon, clove and all spice powders. Give the mixture a good stir.
- Add coffee powder(preferably, instant) at this point.
- Now add in 1 and ½ cup of almond or light coconut milk.
- Add sweetener of choice at this point. I add half a teaspoon of swerve.
- Allow to concoction to simmer while you prepare the toppings.
Step-2: Make the Coconut Cream(Optional)
- In a bowl, take ½ cup of coconut cream, ¼cup aquafaba, and ¼ teaspoon cream of tartar. Add in ¼ teaspoon of almond extract and 1 teaspoon of swerve.
- Whisk well till the cream forms soft peaks.
- Set aside or refrigerate until serving.
Step-3: Make and Serve the Vegan Keto Gingerbread Latte
- Strain the hot latte and pour into cups.
- Top with cream and gingerbread spices and serve.(or, just add some of your favorite toppings, marshmallow in my case)
- Enjoy!!

Ingredients
- 1 cup drinking water
- 1 ½ cup unsweetened almond milk
- 1 tablespoon instant coffee powder
- 1 teaspoon sliced fresh ginger root
- ¼ teaspoon ground ginger powder
- ½ teaspoon nutmeg powder
- ¼ teaspoon cinnamon powder
- ¼ teaspoon clove powder
- ¼ teaspoon allspice powder/five spice powder/garam masala, (you can also use gingerbread spice mix)
- ½ teaspoon Swerve
Coconut Cream
- ½ cup Coconut Cream
- ¼ cup Aquafaba
- ¼ teaspoon Cream of tartar
- ¼ teaspoon Almond extract, (optional)
- 1 teaspoon Swerve
