Ingredients For the Recipe

You’ll need just a few simple ingredients to make the roasted cherry tomato pasta.

  • Cherry tomatoes: 10-15
  • Olive oil: 1 tbsp
  • Salt: ½ tsp
  • Pepper: ½ tsp
  • Mozzarella sticks: 3-4
  • Pizza seasoning: 2 tbsp
  • Basil leaves (chopped): 5-6
  • Pasta (cooked): 1.5 - 2 cups

How to Make the Roasted Cherry Tomato Pasta

Once you have all your ingredients ready, here is what you will need to do to make the roasted cherry tomato pasta. 

Preheat the oven.

Take a baking dish. Add in the cherry tomatoes, olive oil, salt, and pepper.

Place the mozzarella sticks and sprinkle pizza seasoning.

Bake at 180℃ for 15-20 minutes or until the tomatoes are roasted.

Add in the basil leaves next and using a spoon mix the tomatoes with the melted cheese.

Your leftover pasta can be refrigerated in an airtight container for up to 3 days. 
I wouldn’t recommend storing it beyond that point as it can start to ruin the texture and flavor.

Tips & Tricks to Make the Roasted Cherry Tomato Pasta

While making the roasted cherry tomato pasta is super easy, here are a few tips and tricks you might want to take note of. 

  • To make a vegan version of this dish, you can skip the mozzarella and use some nutritional yeast flakes for that cheesy flavor. 
  • Remember to reserve a few spoonfuls of the pasta cooking liquid too. Add it in towards the end along with the pasta. This will help the sauce coat the pasta nicely. 
  • You can also replicate the same recipe using regular tomatoes if you want to. Just chop up the tomatoes into cubes and follow the same recipe as is. 
  • Make sure you use good quality, red and juicy tomatoes for this recipe. The kind of tomatoes you’re using will really make a difference in how the dish turns out. 
  • This is a great dish to utilize your leftover veggies too! Add in some veggies like zucchini, spinach, mushrooms and even bell peppers to bump up the nutritional value of the dish. 
  • If you don’t have the mozzarella that the recipe calls for, you can choose to skip it and just top the tomatoes and pasta with some crumbled feta or grated Parmesan towards the end.
