Vegan Keto pumpkin spice latte

Keto pumpkin spice latte is a lighter or low-carb version of the famous star bucks’ fall drink. It’s sweet, creamy and very much fall-like. Presenting my version of keto pumpkin pie spice latte.

And, guess what! I made it in the instant pot. Just dump everything, 1-minute pressure cook, and done. Now, how easy is that? I am also including a stovetop version, so you can choose any method that you want.

My keto version uses pumpkin puree, plant-based milk, swerve as a sweetener, homemade pumpkin pie spice and whipped coconut cream. It’s creamy, spicy, sweet and so so addictive.

Substitutes - For those who are on a wholefood, plant-based May substitute coconut cream for whipped aquafaba. Vegetarians can always use heavy whipped cream as a topping and replace plant-based milk for dairy-based milk. If you want, you can always make the pumpkin pie spice fresh at home.

How to Make Keto Pumpkin Spice Latte?

How to make vegan keto pumpkin spice latte

INGREDIENTS

• ¼ cup pumpkin puree

• ½ teaspoon pumpkin spice mix

• 1-2 tsps. stevia or swerve 

• 1 tbsp. vanilla extract

• ½ cup full-fat coconut milk or almond milk

½ cup almond-coconut coffee creamer (I use store brought one)

• 2 shots espresso

Toppings:

• Homemade coconut whipped cream for topping

• Ground Cinnamon for topping

Instant pot pumpkin latte

Instructions:

  • In an instant pot safe pot-in-pot, add pumpkin puree, pumpkin spice, almond or coconut milk, vanilla, and creamer and mix well.
  • Add sweetener and water if required. Cover and place it inside the instant pot on a trivet. Set the pressure cooking time in low for 1 minute. 
  • Meanwhile, prepare your homemade coconut whipping cream. Take 1 cup of coconut cream and add a pinch of cream of tartar and stevia or swerve to taste. Whip until the cream looks fluffy.
  • Once the instant pot beeps, wait till natural pressure release.
  • In serving glass, add one shot of espresso. Now add the cooked pumpkin milk mixture. Use a coffee frother to mix and add some froth to the latte. 
  • Now top the coffee with whipped coconut cream and a pinch of cinnamon.
  • Serve warm and enjoy!
  • For stovetop method - add everything (that you will pressure cook in the IP) to a sauce pan and bring the mixture to a boil. Take a serving mug and add the coffee, followed by pumpkin-milk mixture, and top it with whipped coconut cream. Enjoy!
