What Is Keto Peanut Bar Made Of?
The peanut pecan bar by Urvashi is really yum. I just modified it a little and dipped in chocolate, drizzled with some peanut butter before refrigerating them. Another thing that I have done is, divide the dough into two portions and added vanilla protein powder in half before sandwiching both and cutting them into rectangular bars. Coating chocolate is an optional choice. Here is the original recipe of the keto peanut bars and I am including the extra steps in recipe notes.
How To Make Keto Peanut Butter Bars?
Here is a little keto dessert that can be used as snacks and stores well for a week too. using stuff you have in the house. Keto Peanut Butter bars with chopped pecans, chocolates and a drizzle of peanut butter. These keto peanut butter bars are inspired by Urvashi Pitre’s Peanut Pecan Bars as featured in her new book Easy Keto in 30-minutes. Presenting my version of low-carb peanut butter bars.
Ingredients of Keto Peanut Butter Bars:
¾ cup creamy peanut butter, ¼ cup coconut oil, ¼ cup Swerve, 1 teaspoon pure vanilla extract or maple extract, 1 cup finely chopped pecans
Optional:
2 cups of low-carb chocolate, 2 tablespoon of melted peanut butter, 2 scoops of vanilla protein powder
Method of Making Keto Peanut Butter Bars:
- Line an 8-inch square baking pan with parchment paper.
- In a medium microwave-safe bowl, combine the peanut butter, oil, and sweetener. Microwave for 2 minutes, stirring halfway through the cooking time. Stir until ingredients are well-blended.
- Add the extract and pecans; stir well. Pour the mixture into the prepared pan.
- Freeze until set, about 20 minutes. Cut into 16 squares.
- Store in a tightly sealed container for up to 1 week in the refrigerator.
Notes:
- Once you are pecan to the dough, divide the dough into two portions. To one portion add 2 scoops of vanilla protein powder. And mix well. Now transfer the first mixture into the prepared pan and transfer the other dough and spread it evenly on the top of the peanut dough.
- Allow it to cool down in the fridge or freezer. Once set, cut them into rectangles.
- Meanwhile, melt 2 cups of low-carb chocolate in a pan or a microwave-safe bowl.
- Drizzle or dip each bar in the chocolate batter and allow them to set in the refrigerator. Drizzle the chocolate coated peanut bars with more melted peanut butter and cut them into bite-sized pieces.
