Mexican Instant Pot White Bean Soup:

A few years ago, when I found the recipe for the jalapeño lime chicken soup, I always wanted to make a vegan version of it. However, I never tried it until I switched to a meatless diet last Veganuary. That’s when my instant pot white bean soup was born. I have always made white bean soup with kale, loads of tomatoes and sometimes even pasta. But this version is totally different. It’s lighter, has a broth-like base, mildly spiced green chili-lime flavor, and creamy white beans. I have used soy meat for this recipe. But feel free to use soy curl, tofu or even seitan if you want a meaty texture in the soup. You can also skip any soy meat or vegan meat as well.

I usually treat this soup as a flu-fighter soup, since it has garlic, jalapeño, hot broth-like base and a mildly spicy flavor. Another best thing about this soup is you can top it with anything. Yes, literally anything you like. Sautéed mushrooms, baked tofu, crispy radish, fresh jalapeños, and even cherry tomatoes and some Mexican style crisps for a nice bite.

The combination of jalapeño and lime gives this soup a very refreshing flavor. Thanks to fresh cilantro that sure uplifts the flavor of this soup. Most winter soups are typical tomato soups or creamy cheddar soups. While I love those a lot, this new soup does bring a fresh flavor to my palate.

How to make instant pot white bean soup

Ingredients:

1 tablespoon cooking oil, 1 jalapeño, finely chopped after deseeded, 1 jalapeño, sliced (for topping), 1 small red onion, minced, 2 pods garlic, minced, 4 cups water, 1 corn – kernels only(optional), 1/2 cup soy chunks or curls soaked in vegan chicken broth, 2 cups cooked white beans (Great Northern), 1 cup mild salsa verde, juice of 1 lime or more, Toppings – fresh cilantro, nacho chips, sliced cherry tomatoes and radish, Salt and pepper to taste

Instructions:

  • Set the instant pot to a sauté mode. Add oil when the display shows hot. 
  • Now add garlic followed by onions and jalapeño and sauté well.
  • Add corn, and sauté for a minute. 
  • Add in salsa verde, water, soy chunks, water and salt, and freshly ground pepper. 
  • Set the instant pot to a pressure cooking mode and set the timer for 7-minutes.
  • Once the instant pot beeps, open the lid. Add white beans and bring the mixture to a boil.
  • Add cilantro and half of the lime juice.
  • Serve with chips and veggie slices. 
  • Enjoy!
