Flattened rice is one of the most popular ingredients used in almost all the states of India. Easy to digest, filling and yet super healthy, this versatile ingredient can be used in so many different ways. This Doi Chida recipe is a good example- a simple and light breakfast that can be put together in a matter of minutes.

Ingredients For the Recipe

You’ll need just a handful of simple ingredients to put this recipe together.

  • Flattened rice: 1 cup 
  • Puffed rice: 2 cups
  • Jaggery: 6 tbsps or as per taste
  • Cream: ¾ cups
  • Curd: ¾ cups

How to Make the Doi Chida

Once you have everything ready, here’s the process you need to follow to make the Doi Chida from scratch. 

Soak flattened rice into the bowl

Take the flattened rice and soak them in water for 2 minutes. 

Squeeze flattened rice and distribute it into 2 different bowls

Take the soaked flattened rice out of the water and squeeze them. Make sure to squeeze them enough so that there’s no water remaining in them. 

Add Puffed rice in both the bowls

Take 2 bowls. Add equal portions of the squeezed flattened rice in each bowl.

Similarly, repeat the same for the other ingredients. 

Add curd to the bowls
Add creams to the bowls

You can adjust the amount of curd and cream as per your preference. 

Add jaggery on top of both the bowls and enjoy Doi Chida

What Else Can I Add?

While it is best to stick to using just a few simple ingredients to make the Doi Chida, you can still go a step ahead and throw in some more add-ons of your choice to make it healthier and more flavorful. 
Chopped nuts or roasted seeds, for example, taste great when used as a topping on your bowl of Doi Chida, much like oatmeal. Grated dried coconut or coconut shavings are another excellent option, since their flavors work wonderfully with the rest of the ingredients.

Tips & Tricks to Make the Doi Chida

While making the Doi Chida is an incredibly straightforward process, you might want to keep these additional tips and tricks in mind to make sure you nail the flavors and textures. 

  • Unlike overnight oats, it is best to put this dish together fresh. Making it beforehand can cause the flattened and puffed rice to soak up all the moisture and make it excessively soggy. 
  • Don’t have jaggery? You can use honey or maple syrup as a sweetener if you’re trying to keep it healthy, or just use white sugar if you want to. 
  • Make sure you use thick yogurt for this recipe. Greek yogurt is a good option, but if you’re using homeset yogurt, consider draining off all the excess liquid to get that perfect, creamy taste. 
  • You could also use store bought sweetened yogurt for this recipe, and skip adding the additional sweetener. 
  • Consider adding some chopped seasonal fruits of your choice to the bowl of Doi Chida to lend it some extra texture and boost of nutrition. Mangoes, pomegranate arils and jackfruit are some good choices. 
  • It is best to enjoy this dish cold, so make sure you pop it in the refrigerator for just a short while and then dig right into it.
