Sometimes, all you need is a simple meal of chicken curry, some rice and veggies to dig into, and this chicken with seasoned rice recipe is just that. 

A hearty and flavorful curry is teamed up with some rice and lightly sauteed veggies to create a complete, wholesome meal that will become your next staple for a weeknight dinner.

Ingredients For the Recipe

You will need two sets of ingredients to make the chicken with seasoned rice

For the chicken 

  • Chicken: 300 grams
  • Salt: 1 tsp
  • Black pepper powder: 1 tsp
  • Paprika powder: 1 tsp
  • Onion powder: 2 tsp
  • Garlic powder: ½ tsp
  • Oil: 2 tbsp
  • Garlic (minced): 1 tbsp
  • Green chilies (minced): ½ tbsp
  • Onions (sliced): 1.5 cups
  • Bell peppers (julienne): 1 cup
  • Tomato puree: 1 cup
  • Mixed herb seasoning: 1 tbsp
  • Chicken broth: 1 cup

For the rice

  • Butter: 1 tbsp
  • Garlic (minced): 1 tbsp
  • Corn kernels (boiled): ¼ cup
  • Mixed herb seasoning: 1 tbsp
  • Salt: ½ tsp
  • Rice (cooked): 1.5 cups
  • Parsley (chopped): For garnish

How to Make the Chicken with Seasoned Rice

Once you have all the ingredients, ready, here is what you will need to do to make the dish

Take a mixing bowl and add the chicken along with salt, black pepper powder, paprika powder, onion powder, and garlic powder. Mix well with the chicken. Make sure each and every piece is properly coated with teh spices.

Next, heat oil in a non-stick pan. Add the garlic and green chilies and saute for 45 seconds.

Add the onions and the bell peppers. Stir and cook for 3-4 minutes or until the onions turn translucent.

Next, add in the tomato puree and mix well. Let the curry simmer for 5-6 minutes.

Add the marinated chicken next and mix. Saute and cook the chicken for 8-10 minutes.

Add mixed herb seasoning and saute.

Add chicken broth and let the curry come to a boil and then lower the heat and let it simmer for 5 minutes. Cook until the chicken is completely cooked.

Next, for the rice, heat butter in a pan. Add garlic and onions and saute. Stir and cook for 2 minutes.

Add in the vegetales next and maxi well. Saute and cook for 3-4 minutes. The vegetables should be cooked enough but still retain their crunchiness.

Add in the mixed herb seasoning and salt next and mix well with the vegetables.

Next, add the cooked rice and give everything a good mix. Lower the heat while you are mixing the rice.

Serve the rice hot with the delicious chicken curry and garnish with parsley.

What Else Can I Add to the Chicken with Seasoned Rice?

I used a variety of veggies into the dish, but if you have a few extra at hand that you want to use you could do that too.

How Do I Store the Leftovers?

If you have any leftovers, you can refrigerate them in an airtight container separately for up to 2 days. 
Reheat them individually and then serve them together. You can use a microwave to reheat them or just place them in a pan over medium heat and stir them nicely before you serve them together. top view of chicken with seasoned rice

Tips & Tricks to Make the Chicken with Seasoned Rice

Ready to give this recipe a try? You might want to take note of these tips and tricks as well. 

  • I would recommend using long grained white rice for this recipe. You could use brown rice as well, but just make sure it is well cooked, but not over cooked.
  • To make sure the rice is nice and fluffy, rinse it well to get rid of the extra starch and cook it just until it is all done.
  • If your curry has ended up too runny, allow it to reduce on low heat. 
  • You could also choose to use tomato paste instead of tomato puree, if you prefer a thicker curry. 
  • You can use practically any cut of chicken for this recipe, but I would recommend using boneless thighs to get the most juicy and tender cuts. 
  • You can also prep for this dish in advance. Simply prepare chicken curry and refrigerate it for up to 2 days. You can then quickly put the rice together and serve it with the curry when you want to. 
  • Want to amp up the heat in this dish? Simply add some chopped chilies into the chicken curry. 
  • You could also make the chicken with seasoned rice by using leftover rice from the other day. Just make sure you remove all the clumps by gently pressing down on it with a spoon, and then you’re good to go.
