Ingredients For the Recipe

You’ll need just a few simple ingredients to make the 2 minute strawberry cupcake. 

  • Whole Wheat flour: ½ cup
  • Vanilla essence: ½ tsp
  • Baking soda: ¼ tsp
  • Honey: 4 tbsp
  • Milk: ¼ cup - ½ cup
  • Olive oil: 1 tbsp
  • Strawberries (chopped): 1 large

How to Make the 2 Minute Strawberry Cupcake

Got everything ready? Here’s what you’ll need to do to make the 2 minute strawberry cupcakes.

Take a mixing bowl and add all the ingredients except the strawberries. Whisk. 

Take a ceramic mug and grease it with melted butter.

Next, place half the mixture into the cup.

Top it up with the remaining mixture followed by more chopped strawberries. 

Cook it in the microwave for 3-5 minutes.

Ready to make this easy strawberry cupcake? Here are some tips and tricks you might want to take note of. 

  • Remember to use good quality, fresh baking soda for the recipe. The quality of the leavening agent plays a key role in determining how soft and fluffy the cake will turn out. 
  • Avoid over mixing the batter. This will cause the cake to become dense. 
  • Cut the strawberries into small chunks. This will cause them to mix within the cupcake batter and also add that delicious sweet and tart juiciness to it. 
  • I used whole wheat flour to make the cupcakes healthy, but you could also choose to use regular flour if you want to. 
  • Honey worked as a natural sweetener here, but you could also stick to using plain white sugar instead if you want to. 
  • Make sure you fill the batter only until about half of the cup, leaving the other half of the space for the cake to rise. Adding too much batter will cause the cake to overflow as it is cooked.
