You will need three sets of ingredients to make the prawn and egg fried rice.

For the eggs and rice 

  • Oil: 2 tbsp
  • Eggs: 4
  • Rice (cooked): 1.5 cups
  • Spring onions (chopped): ¼ cup
  • Carrots (diced): ½ cup

For the prawns

  • Oil: 1 tbsp
  • Prawns: 200 grams
  • Salt: ½ tsp
  • Black pepper powder: ½ tsp

For the fried rice

  • Oil: 1 tbsp
  • Garlic (minced): 2 tbsp
  • Soy sauce: 2 tbsp
  • Apple cider vinegar: 1 tbsp
  • Prepared eggs and rice
  • Prepared prawns
  • Spring onions (finely chopped): For garnish

How to Make the Prawn & Egg Fried Rice

Once you have all your ingredients ready, here is what you’ll need to do to make the prawn and egg fried rice.

Heat oil in a pan. Add the eggs. Toss and cook them for 2-3 minutes. Cook them just 80% and not completely.

Next, add in the cooked rice and mix well with the eggs. Keep mixing and stirring continuously for 2 minutes.

Add in the spring onions and carrots and mix well with the rice and eggs.

Keep stirring and mixing continuously for 2-3 minutes. Keep it aside once done.

Next, heat oil in the same pan and add in the prawns. Season with salt and pepper and cook them for a minute or two or until the prawns are cooked. Keep them aside.

For the final cook, heat oil in the same pan again. Add in garlic and saute until the raw aroma of the garlic disappears.

Next, add soy sauce and apple cider vinegar and mix with the garlic.

Add in the prepared rice and eggs and the prawns. Stir continuously for 3-4 minutes.

In addition to everything that I added, you can also throw in some other veggies of your choice to make the fried rice healthier and tastier.

How Do I Store the Leftovers?

The egg fried rice can easily last for 3 to 4 days in the refrigerator. Just move it to an airtight container and then reheat it in the microwave or in a pan with a little splash of water to make it nice and moist. spicy prawn and egg fried rice

Tips & Tricks to Make the Prawn & Egg Fried Rice

Ready to give this recipe a shot? Here are some tips and tricks you might want to take note of before you do.

  • I would recommend using long grained rice to make this fried rice dish. This will help with the texture and aesthetic appeal and you’ll get those perfect fluffy grains you’re looking for. 
  • Based on your personal preference, you can also add other seasonings and sauces of your choice to add some more flavor to your dish. Hot sauce, oyster sauce, and dark soy sauce are some good choices. 
  • Remember, not to overcook the prawns or they will end up becoming tough and chewy. The cooking time will depend on their size. Larger prawns take longer to cook while smaller prawns can be cooked in minutes.
  • You can also make this recipe with leftover rice. Just remember to fluff the rice with a fork and separate the grains  before you add them into the mix. 
  • If you are worried about the rice getting all clumped together and getting sticky, I would recommend cooking the rice in an excess amount of water and then straining all the excess water once the rice is done cooking.
  • If you are cooking the rice specifically for this dish, remember to rinse it nicely under cold water, drain them nicely and then add them into the mix.
  • You could also use microwavable pouches of rice to make things easier.  
  • Another great idea is to swap the prawns for some other protein of your choice. You could use chicken, turkey or even tofu.
