Ingredients For the Recipe

To make the green gram uttapam roll, here is what you will need

For the green gram paste

  • Green moong gram: ½ cup
  • Cumin seeds: 1 tsp
  • Coriander leaves: A bunch
  • Ginger garlic paste: ½ tbsp
  • Green chilies: 1-2
  • Salt: 1 tbsp
  • Water: ¼ cup

For the uttapams

  • Prepared green gram paste
  • Water: As required
  • Onions (finely chopped): As required
  • Tomatoes (finely chopped): As required
  • Coriander leaves (finely chopped): As required
  • Oil: For drizzle

How to Make the Green Gram Uttapam Roll

Once you have your ingredients ready, here is what you need to do to make the green gram uttapam roll

Soak the green moong gram in enough water for about 2-3 hours. 

Drain the water and transfer the soaked green gram to a blender.

Add cumin seeds, ginger, garlic, coriander leaves, green chilies, salt, and water. Blend into a smooth paste. You can add more water if required.

Transfer the paste to a mixing bowl. Add a little bit of water to reduce the consistency.

Heat a tawa. Drizzle some oil on top. Take a ladle full scoop of the prepared batter and add it to the pan. Flatten it out in circular motions.

What Else Can I Add to the Green Gram Uttapam Roll?

I have used simple toppings of chopped onions, tomatoes and a bit of coriander leaves to the uttapam rolls. You can top the rolls with any other toppings of your choice too, if you want to. 
Grated carrots, beet, crumbled feta cheese or cottage cheese and even chopped spinach can really elevate the flavors and the nutritional value of these green gram uttapam rolls.

How Do I Store the Leftovers?

Tips & Tricks to Make the Green Gram Uttapam Roll

Ready to try out this fun and interesting recipe. Here are some additional tips and tricks you might want to keep in mind.

  • While you can make do with soaking the green green gram for 2 to 3 hours, I would highly recommend soaking them overnight. Doing this will get rid of the phytic acid content in the legumes and also make them tender and easy to cook.
  • Remember to use a heavy bottomed, non-stick pan or a cast iron skillet to make these uttapam. This will ensure that the uttapam doesn't end up sticking to the pan.
  • When cooking these uttapam, keep the heat medium to low. This will ensure that they are all cooked through.
  • You can also use yellow moong dal in addition to the green moong dal to make this uttapam more protein rich and nutritious.
  • To make the uttapam have a more bright green color, you can add some green peas or blanched spinach into the mixture and blend it nicely before you use the batter. 
  • To help the chopped veggies in the filling stay in place, you can spread a bit of cream cheese onto the uttapam and then top it with the chopped veggies and coriander. 
  • You can also choose to fill the uttapam with boiled and mashed spiced potato filling just like regular dosas.
