Bhapa Doi aka steamed yogurt is a simple and versatile and rich yogurt pudding, which is a common dessert in India.

Ingredients For the Recipe

You’ll need two sets of ingredients to make the Bhapa Doi. 

For the condensed milk

  • Milk: 1 cup
  • Sugar: ½ cup
  • Butter: 1 inch stick

For the steamed yogurt

  • Hung curd: 1 cup
  • Coffee decoction: ¼ cup
  • Condensed milk: ½ cup

How to Make the Bhapa Doi

Once you have all the ingredients ready, here is what you’ll need to do to make the Bhapa Doi from scratch. 

Bring milk to a boil in a saucepan.

Once the milk starts boiling, add the butter and sugar and whisk continuously for 2-3 minutes.

Let the mixture simmer. You will notice the color of the milk changing to light yellow/cream. Once the mixture becomes half in quantity, the condensed milk is ready.

Transfer the condensed milk to the refrigerator and let it cool down.

Next, take a mixing bowl and add the hung curd, coffee decoction, and the prepared condensed milk. Whisk the mixture together. 

cover it with the foil and let it rest

 Cover the mixture with aluminum foil and steam for 20 minutes. Let the mixture cool down to room temperature.

Transfer the steamed mixture to cups or bowls of your choice for individual portions. Transfer the cups/bowls to the refrigerator and let it chill for at least 5 hours.

What Else Can I Add to the Bhapa Doi?

In addition to everything that we used, you can also add some other ingredients of your choice to the Bhapa Doi to bring in a bit of variation in terms of flavor. 
Cardamom powder, vanilla extract, and saffron are some classic choices that you can opt for.

Tips & Tricks to Make the Bhapa Doi

Making the Bhapa Doi may be super easy, but you might want to take note of these tips and tricks as well. 

  • To get the Bhapa Doi to set perfectly and to get it to have the right consistency, you may want to add a spoonful of cornflour into it while you add the hung curd.
  • You can also choose to swap the curd in the recipe with some Greek yogurt to make it healthier and creamier. Remember to use the unflavoured and unsweetened variety.
  • To make this Bhapa Doi healthy, you can swap the sugar in the recipe with some jaggery powder instead, or any other natural sweetener of your choice for that matter. 
  • I would recommend using full fat milk for this recipe. If you are using a low-fat variety, you won’t be able to get that perfect creamy consistency.
  • If you don’t have any full fat milk, you can compensate for the lack of fat by adding some fresh cream into the mix
  • If you don’t have a steamer, you can steam and cook the Bhapa Doi using your microwave too! Remember to microwave the yogurt at medium level in a microwave safe bowl for it to set perfectly.

Serving Ideas & Suggestions

You can serve this creamy dessert as is or top it with some chopped nuts of your choice. 

I love serving it with some candied nuts that are roughly chopped. They just help bring that extra bit of texture to the Bhapa Doi.
