Some air-fryer samosa to satisfy your fried fritter cravings? Sounds awesome, doesn’t it? Finally, I have the easiest(yes, no dough making or rolling) air-fryer samosa, which is also low-carb and yet super yum. Presenting my low-carb samosa recipe made in the Cosori Wi-Fi air fryer.

I always love the idea of air-frying over deep-frying. Both versions give some crispy and indulgent results; however, the latter leaves your food greasy and calorie-laden whereas the former doesn’t. Air-fryers have such a wonderful technology that uses heatwave to fry or crisp up your food without any oil. Samosa made in the air fryer

Traditional samosa is made from an all-purpose flour dough stuffed with spicy potato masala. For an Indian, samosa is not just a fritter. It’s a memory for most Indians. For me, samosa takes me to the fondest memories of my childhood when my dad took us to the Banarsi stores to try the finest samosas available. The restaurateur was always generous to serve his crispiest samosa with spiciest potato curry smeared with a layered of reddish chili-tempered oil. Maybe that was the unhealthiest street-food I am talking about but tastes the best of all.

Low-Calorie, Air-Fryer Samosa in Cosori Air Fryer:

My samosa is no way a close match to the street vendor’s samosa I savored as a little girl. In fact, it has no such ingredients that a traditional Indian samosa has. But I assure you that this is the healthiest samosa you will ever have. My keto samosa has a spiced cauliflower and French bean masala or stuffing and wrapped with coconut wraps and air-fried to perfection. The coconut wraps does have a mild coconut flavor, which goes really well the spicy, curried cauliflower masala filling. But feel free to use phyllo or filo dough sheets as I often use to make low-calorie samosa.

Keto Samosa

I have a very simple, Indian-style filling for this recipe. I have used the five-tadka or paanch-phoron for this recipe. But feel free to use only cumin and mustard seeds. The strong flavors of ginger, green chilies, curry powder blend and light dry mango powders meddle really well to make the filling really flavorful.

Cauliflower Samosa Filling:

I usually like to use chopped pieces of cauliflower and green beans. But feel free to use cauliflower rice in this recipe. It works the same way or even better if you like a mushy filling like the usual potato filling. I like a chunky filling, so I keep my cauliflower and beans chopped. Adding spices to the filling is optional. I have added very few spices. You can also add Punjabi spice mix, nuts and even green peas to your masala. For strict ketoers, I suggest adding only nuts.

How To Make Keto Air Fryer Samosa?

Baked samosa

Ingredients:

Six cups of cauliflower rice or 4 to 6 cups of roughly chopped cauliflower Florets, 1 cup chopped green beans, ½ cup chopped red onions, 4-6 green chilies chopped, 2-inch ginger peeled and grated, salt and pepper to taste, 1 teaspoon curry powder, 1 tablespoon coriander powder, ½ teaspoon chili powder, ½ teaspoon dry mango powder, cilantro to garnish, 1 teaspoon oil or aquafaba if oil-free, ½ teaspoon panch phoron or cumin and mustard seeds mixed, 1 pack coconut wrap or 5 sheets of phyllo/filo dough sheets(low-calorie but not low-carb)

Optional – roasted peanuts or cashews

Method:

Make the Cauliflower Filling:

How to make cauliflower filling for samosas

Heat a pan and add a teaspoon of avocado or any cooking oil. If you wish to avoid oil, just heat the pan till it’s hot. Now add the panch phoron or cumin and mustard seeds and allow them to splutter.

Now add ginger and allow the herb to infuse in the oil. If not using oil, add aquafaba or water to allow the ginger to release its flavors. Now add spices, green chili, and add all the veggies. Mix well to combine. Cover and cook till the veggies are soft and mix the mixture in regular intervals to avoid burning at the bottom of the pan.

Add salt, pepper and cilantro and roasted nuts if using. Use a spatula to lightly mash the veggies and cook till the mixture is dry and no water is left. The stuffing is ready to use for making samosas. Allow the mixture to cool down before using to make samosas.

How to make samosa easily

Take the Coconut wraps or filo sheets out of the refrigerator and allow them to come to the room temperature before using them in the recipe. Coconut wraps are usually made from the flesh of coconut and dehydrated coconut.

These wraps and super thin and can be used in wraps, rolls and even samosas. Lay the wrap flat on a baking sheet. Use a pizza cutter to cut the wrap into two thin strips.

Now add a spoonful of the cauliflower mixture to one end. Fold the edge over to make a triangle and keep folding it slant-wise yet vertically till you have a mini-tringle samosa ready. Use some water to seal the edges of the coconut wrap.

Use the remaining coconut wraps to make samosas and set aside. Follow the exact same procedure with filo dough sheets as well. Remember to thaw your filo sheets in refrigerator overnight.

Air Fry Samosas:

  • Preheat the air fryer at 350F for 5 minutes. Line the inner basket with a parchment paper and add keto samosas.
  • Air fry for six minutes and then turn and air fry for 4 more minutes till the edges are nicely brown and the samosas are super crispy.
  • Serve the samosas warm and with some cilantro chutney or spicy red-tomato chutney. Enjoy.

Ingredients

  • 6 Cups Cauliflower rice (raw), (or 4 cups chopped cauliflower florets)
  • 1 Cup Chopped green beans
  • ½ Cup Chopped red onions
  • 4-6 green chilies chopped
  • 2-inch ginger peeled and grated
  • salt and pepper to taste
  • 1 teaspoon curry powder
  • 1 tablespoon coriander powder
  • ½ teaspoon chili powder
  • ½ teaspoon dry mango powder
  • cilantro to garnish
  • 1 teaspoon oil and water or aquafaba if oil-free
  • ½ teaspoon panch phoron or cumin and mustard seeds mixed
  • Optional – roasted peanuts or cashews

Wraps

  • 1 pack Coconut Wraps (Not coconut tortillas)(contains 5 wraps), (or 5 Phyllo/Filo Sheets if not low-carb)
  • Oil to brush

Instructions

Make Stuffing Masala

  • Heat a pan and add a teaspoon of avocado or any cooking oil. If you wish to avoid oil, just heat the pan till it’s hot.
  • Now add the panch phoron or cumin and mustard seeds and allow them to splutter.
  • Now add ginger and allow the herb to infuse in the oil.
  • If not using oil, add aquafaba or water to allow the ginger to release its flavors.
  • Now add spices, green chili, and add all the veggies. Mix well to combine.
  • Cover and cook till the veggies are soft and mix the mixture in regular intervals to avoid burning at the bottom of the pan.
  • Add salt, pepper and cilantro and roasted nuts if using.
  • Use a spatula to lightly mash the veggies and cook till the mixture is dry and no water is left.
  • Instant Pot Method: Set the instant pot to a sauté mode, add oil followed by seeds and allow to splutter. Add ginger and sauté well. Now add all the veggies and spices, salt and close the lid and set pressure cook for 0-minutes. As the pressure valve starts to rise, switch off the instant pot, and wait for five minutes and then open the lid. Set the instant pot to sauté button again and cook the mixture till the water dries out. The masala is ready.
  • The stuffing is ready to use for making samosas. Allow the mixture to cool down before using it to make samosas.

Make Samosa

  • Take the Coconut wraps out of the refrigerator and allow them to come to the room temperature before using them in the recipe. If using Filo or Phyllo wraps, then thaw them in refrigerator overnight and keep them in room temperature for an hour before using.
  • Coconut wraps are usually made from the flesh of coconut and dehydrated coconut. These wraps and super thin and can be used in wraps, rolls and even samosas.

Notes

  • Sometimes coconut wraps may brake while making samosas. That usually happens if the wraps are dry. I spray the wraps with water before working with them, which makes it easy to fold and make a triangle. If making a shape out of the tortillas become difficult, roll them as spring rolls and seal the edges before air frying.
  • These samosas stay crisp for an hour. If making in advance, don't store them in a container. Instead, let them stay on a cookie sheet and air fry for another 3 minutes before serving. They crisp up really well and taste the best when heated in an oven or air fryer.

    This looks good! Where do you get coconut wraps? I looked on Amazon and saw some but they look thicker than the ones in your picture. If you have a favorite brand you use for the wraps to make the samosas keto, please let me know. Thank you!

      I bought from Walmart. There are thin wraps and thick wraps, you can check while buying. Wholefoods have the best options.
