You’ll need just 4 simple ingredients to make the green chili with bamboo shoot. 

  • Mustard oil: 1 tbsp
  • Green chilies (whole): 15-20
  • Salt: 1 tbsp
  • Fermented bamboo shoot: 4 tbsp

How to Make the Green Chili with Bamboo Shoot

Got everything ready? Here’s what you’ll need to do to make the green chili with bamboo shoot.

Heat oil in a pan. Add the green chilies and saute for 5-6 minutes.

Add the salt and saute for 2-3 minutes.

Add in the fermented bamboo shoots next and mix well. Saute for 2-3 minutes more.

  • I used green chillies for this recipe, because that’s what I had at hand, but you could also choose to use red chillies if you want to. 
  • Thai bird chillies are also a great choice for this recipe, but keep in mind that they can be pretty spicy. 
  • To cut down the spice, you can choose to de-seed the chillies before you stir fry them. 
  • I used mustard oil for the recipe to get that nice smoky flavor, but if you want to, you could use almost any other cooking oil of your choice. 
  • Another great idea is to simply saute the fermented bamboo shoots, take it off heat, and then add in a few spoonfuls of chili oil instead of sauteing the whole chillies. 
  • If you’re using bamboo shoots in brine, remember to drain away all the liquid and allow the shoots to dry up a bit before adding them into the pan.
