You will need just a few simple ingredients to make these pumpkin fritters.

  • Pumpkin pieces: 10-12
  • Chickpea flour: 1 cup
  • Turmeric powder: ¼ tsp
  • Red chili powder: ½ tsp
  • Garam masala powder: ½ tsp
  • Salt: ½ tsp
  • Water: ¼ cup
  • Oil: For frying
  • Chaat masala: For garnish

How to Make the Indian Style Pumpkin Fritters

Got all your ingredients ready? Here is what you will need to do next to make these delicious pumpkin fritters.

Soak the pumpkin pieces in salt water for 20 minutes

put all the other ingredients into the bowl

Take a mixing bowl and add the chickpea flour, turmeric powder, red chili powder, garam masala powder, and salt. Mix well.

add water and make it a slurry mixture

Next add water and whisk the mixture together.

Add in the pumpkin pieces next and coat them well with the chickpea flour mixture.

Heat oil for frying and fry the pieces  for 3-4 minutes over medium flame or until they turn golden brown.

Tips & Tricks to Make the Indian Style Pumpkin Fritters

Ready to try out this recipe? Here are a few tips and tricks you might want to take note of. 

  • For this recipe, I chopped up the pumpkin into pieces and then tossed them into the spiced flour. You can choose to shred the pumpkins and mix them with flour as well if you want to.
  • To make these pumpkin fritters extra crispy, add some rice flour into the flour mixture along with the chickpea flour. 
  • I deep fried the pumpkin fritters, but if you want to make them healthy, you can choose to air fry them too. Another great idea is to bake these pumpkin fritters. Just remember to grease the fritters with a bit of oil to get them nice and crispy. 
  • If you have any leftover batter, you can use it to coat some cubed cottage cheese or tofu or any other vegetable of your choice.
  • When deep frying the Indian style pumpkin fritters, make sure the oil is hot when you add in the fritters, and once you do, bring down the heat to medium.
  • Frying the fritters at low heat will cause them to soak up a lot of oil, and if you keep the heat high, the fritters will end up burning on the outside and staying undercooked in the middle.
  • To make these pumpkin fritters more soft, juicy and creamy, you can also add a bit of yogurt into the flour mixture. Just remember to reduce the amount of water you’re adding to adjust the consistency. 
  • The consistency of the flour batter matters a lot when it comes to getting the perfect crispy fritters. The batter should not be too thick, nor too thin.

These crispy pumpkin fritters taste best when served as a snack or a part of your breakfast. Team them up with some coffee or tea and a dipping sauce on the side.

I like to pair them with my vegan cream cheese and with my Thai style curry pesto.
