Ingredients For the Recipe

To make the spicy garlic egg dosa, here is what you will  need

For the Garlic Chutney

  • Onions (roughly chopped): ¼ cup
  • Garlic: 8-10 cloves
  • Dry red chilies: 2-3
  • Tamarind paste: 2 tbsp
  • Cumin seeds: 1 tsp
  • Salt: 1 tsp
  • Oil: 1 tbsp
  • Mustard seeds: 1 tsp
  • Curry leaves: 8-10

For the Garlic Dosa

  • Dosa batter (store bought or freshly prepared): As required
  • Prepared garlic chutney
  • Eggs: 2

How to Make the Spicy Garlic Egg Dosa

Once you have all the ingredients ready, here is what you will need to do to make the spicy garlic egg dosa

Take a blender and add the onions, garlic, dry red chilies, tomatoes, tamarind paste, cumin seeds, and salt.

Add 2-3 tablespoon of water and blend into a smooth paste.

Next, heat oil in a pan. Add the mustard seeds and curry leaves and let them crackle.

Add the blended paste and mix well. Let it cook for 3-4 minutes. Keep it aside once done.

Heat a flat tawa or a dosa pan. Drizzle some oil. Take one ladle scoop of the dosa batter and spread it out in circular motions. Let it cook for a minute.

Spread the prepared garlic chutney on top of the dosa.

Break an egg next and spread it all over the dosa.

Fold in the parts of the egg that have spilled away from the dosa into the dosa.

Flip the dosa and cook the other side for 1 minute. 

Repeat the same steps for the other dosa.

What Else Can I Add to the Spicy Garlic Egg Dosa?

In addition to the garlic chutney and the egg, you can also top the dosa with many other toppings of your choice. 
You can layer the egg portion with the classic potato mixture or some chopped veggies if you want to.

How Do I Store the Leftovers?

You can store the garlic chutney in the refrigerator for up to a week. Just make sure you use a clean container to store it.

Tips & Tricks to Make the Spicy Garlic Egg Dosa

While the recipe for the spicy garlic egg dosa is super simple, you might want to have these little tips and tricks handy to make sure you nail the recipe.

  • To make the dosa even more healthy, you can use foxtail millet or little millet instead of the rice used for the batter. 
  • Remember to season the egg on the top of the dosa too. 
  • To add some more flavor and deliciousness to the dosa, you can cook it in butter instead of oil. 
  • The garlic chutney gets its tanginess and sourness from the tamarind. If you don’t have tamarind, you can use lemon juice instead. 
  • You can also choose to cook the tomatoes in a pan until they’re soft, allow them to cool down and then use them for the chutney recipe. 
  • Make sure the dosa batter is at room temperature before you start to make the dosas. 
  • Also remember to use a heavy bottomed pan, ideally a non-stick pan or a cast iron skillet that is well greased to make the dosas. This will keep the dosas from sticking to the pan. 
  • Always cook the dosa on medium heat- this will ensure that it has cooked all the way through, and still has that brownness and crispy texture you’re looking for.
