  • ½ cup Granulated Sugar
  • ½ teaspoon Baking Powder
  • ¼ teaspoon Baking Soda
  • ¼ teaspoon Salt
  • 2 tablespoons Matcha Powder
  • ½ cup Vegan Butter, softened
  • 2 tablespoons Aquafaba (liquid from a can of chickpeas)
  • 1 teaspoon Vanilla Extract
  • ¼ cup Almond Milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, salt, and matcha powder.
  3. Add in the softened vegan butter and mix until crumbly.
  4. In a separate mixing bowl, beat together the aquafaba and vanilla extract until light and fluffy.
  5. Gradually add in the dry ingredients to the wet ingredients, mixing well after each addition.
  6. Stir in the almond milk until just combined.
  7. Using a cookie scoop or tablespoon, drop rounded scoops of batter onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes or until the edges are lightly golden and the tops are set.
