Keto instant pot spinach artichoke dip

Want a keto spinach artichoke dip? Here I have the best low-carb version of spinach artichoke dip made in the instant pot. It’s quick, easy and takes just 3 minutes. Let’s begin, shall we?

Keto spinach artichoke dip

I always loved spinach artichoke dips until I came to know that restaurants or packaged ones use flour as a thickener, which is why the carb count piles up. My version is keto, which means you don’t have to worry about the carb count. Plus, it uses all keto compliant ingredients that you will love.

This is cheesy, creamy, savory and has a hint of spices from the dried seasonings and red chili flakes. Serve this warm dip with your favorite chips or keto crackers. You can also use some coconut flour crackers to serve with this recipe. It’s just so so good on its own or as a dip. My kids love this so much that they slather their bread with this cheesy dip. Well, you can do that too. Use this as a spread on your keto zucchini tortilla or this flaxseed flatbread and use a generous homemade instant pot paneer filling to make a hearty yet keto compliant roll-up.

I have been meat-free for over 11 months now and I couldn’t be happier. Now that I don’t eat meat, I make a number of such unique, low-carb vegan and vegetarian dishes to fill up my menu. And, instant pot cooking has become an everyday thing as well. Visit here to see what all instant pot recipes I love.

How to Make Keto Spinach Artichoke Dip?

This keto spinach artichoke dip has a very few ingredients. There is artichoke (I am using the brined, bottled variety but you can use the frozen ones too), frozen or fresh spinach, seasoning mix, cream cheese, cheddar and mozzarella cheese, green onions and freshly chopped garlic. Most of these ingredients are everyday pantry or refrigerator staples that you can find easily to make this dip.

How to make spinach artichoke dip

Ingredients of Instant pot Keto Spinach Artichoke Dip

The ingredients that I used for this recipe are:

1 ½ cup frozen spinach, 1 cup frozen or canned artichoke (rinsed and drained), 8 ounce or 1 block cream cheese, ½ cup vegetable stock, 3 cloves of garlic chopped, ¼ teaspoon crushed red pepper flakes, 1 tablespoon dried onion flakes, ½ teaspoon dried Italian seasoning, 2 green onions chopped, ½ cup mozzarella cheese and ¾ cup cheddar cheese – shredded, ½ cup sour cream, salt and pepper to taste

Method to Make Spinach Artichoke Dip in IP:

  • Set the instant pot to a sauté mode and allow it to heat well.
  • Add oil and wait for a few minutes and add chopped garlic. Allow the garlic to infuse in the oil.
  • Now switch off the instant pot and add spinach, artichoke, spice seasoning mix, cream cheese and vegetable broth, green onions and salt.
  • Stir well and set pressure cooking for 3-minutes. Once the instant pot beeps, quick-release pressure carefully.
  • Now open and stir in sour cream, shredded cheese and mix well. Garnish with some more chopped green onions and heavy cream.
  • Serve warm with chips, veggies and crackers.
