The Cucumber corn salad is very similar to the Mexican grilled corn often served in streets of the Latin American towns. This grilled corn salad is sweet, spicy, and perfectly dressed with a spicy-tangy cilantro-jalapeño dressing. This corn salad with avocado and tomatoes is a meal in itself.  Let’s make it.

How to Grill Corn?

Making grilled corn is easy. You can roast corns directly over the flame or the grill or cook them in the oven till they are charred and roasted. This salad has grilled corn that I made in the instant pot. I often make this salad during summer. It reminds me that we are almost in mid-September and before the summer ends, I wanted to make this again. This salad is refreshing and so delicious. It has fresh fruits and veggies, a generous amount of herbs and a hint of spices.

Cucumber and its Health Benefits: 

Adding cucumber to a salad makes it more crunchy, refreshing and a lot summer-like. The fruit has a lot of water content, which makes it so ideal for summer months. We Indians have a special love for cucumbers. We eat it with almost all meals.

How to Make Instant Pot Corn on the Cob?

Cooking corn in the instant pot is very easy. All you need is clean the corn on the cob, boil or steam them in the instant pot and all done.

Clean- remove the husk and silk from the corns. Wash and pat dry. 

Steam or pressure cook - Place the corn on the cob inside the inner pot filled with 2 cups of water or on a steam rack placed over the trivet. Set the instant pot to the steam mode for 10-minutes or pressure cook for 5-minutes. Quick pressure release after pressure cook and open the lid.

Serve - After pressure cook, remove the corn and place it on a plate. Allow it to cool down, and then use a sharp knife to remove kernels from the cob. (If grilling, follow the next grilling steps).

Why To Cook Corn In The Instant Pot?

Well, this machine is a regular in my kitchen. I use Instant pot here to steam my corns first and then slightly char them on the flames or over the grills for just a minute or two till I get that nice char on them. I also use the CrispLid to roast the corn on the cob after they are steamed. Just 3 minutes each side and they are nice, charred, and beautifully roasted.

How to Grill Corn In The Instant Pot?

Grilling corn in the instant pot is simple. Remove the husk and clean the corn. Pressure cook them for five minutes and quick release the pressure. Now brush them with oil or just simply, place them on the CrispLid pan and roast at 350F for 3 minutes each side. The instant pot grilled corn is ready.

How to Make The Cilantro-Jalapeño -Lime Dressing?

The dressing is pretty simple and easy. Take all the ingredients listed under the dressing ingredients and add them to a jar. Blend well until you have a thick, dressing ready.

Ingredients for the cucumber corn Salad:

The ingredients for this salad are: 2 cups grilled corn, 1 cup diced cucumber, ½ cup diced tomatoes, ¼ cup chopped or diced avocados, ¼ cup chopped cilantro, and salt and pepper to taste

For the dressing - ½ cup cilantro, 1 jalapeño or Serrano pepper (seeds removed), 1 lime juice, 2 tablespoon olive oil or ¼ cup aquafaba, ½ teaspoon garlic powder, ½ teaspoon Maple syrup(optional), salt and pepper to taste 

Tortilla chips and strips to garnish

  • Take a large bowl and add all salad ingredients to it. 
  • Add all dressing ingredients to a blender and blend until a purée is formed. 
  • Pour salad dressing over the salad and give a good mix.
  • Adjust salt and pepper if required and top with tortilla strips.
  • Serve immediately.
  • If you want to store the salad, don’t add the dressing. Always add the dressing right before serving.
  • You can refrigerate the grilled corn and the dressing separately for up to three days.

Ingredients

  • 2 cups grilled corn (kernels from two cooked corns)
  • 1 cup diced cucumber (1 large cucumber)
  • ½ cup diced tomatoes
  • ¼ cup chopped or diced avocados
  • ¼ cup chopped cilantro
  • salt and pepper to taste

Dressing

  • ½ cup Cilantro
  • 1 Serrano pepper or jalapeno
  • Juice of 1 Lime

Corn is high in starch or carb and makes a good side dish for proteins. If you want a side salad for your steak, fish or chicken, then this salad is an ideal choice.

Do you salt the water when boiling corn?

Adding salt to the boiling water is an optional choice. It is better not to add salt while cooking corn in the boiling water. In that way, it stays tender even after cooking.

How do you shuck corn easily?

Start by peeling off the outer leaves and grasp the tops of the leaves and the silky strands, and pull down in one firm tug. Alternatively, microwave the corn for a minute and then peel it. The heat makes the tassel removing really easy.

Do you have to remove silk from corn before grilling?

The corn on the cob can be grilled with its husk and silk or without them. If you choose to grill the corn without the husks, just remove the fine silk strands before grilling.

Do you need to soak corn before grilling?

If you are grilling corns directly on the grill, then presoak them in water for about 30 minutes. This keeps the corn kernels moist and juicy even after cooking.

    I agree that this corn salad with avocado and tomatoes is a meal in itself! Which is just what I have been looking for. I have a daughter looking to be a vegetarian and so I have been looking for meals that we can have with meat yet still give her the nutrients she needs in a full meal. Perfect!
