Vegan Keto Eggnog is easy to make. It has a good share of nutty milk(or replace it with oats milk or coconut milk), creamy avocado, pure vanilla extract and spices. As the holiday season sets in, the spices become omnipresent in most recipes. You will find cinnamon, nutmeg and a melange of star anise and other spices(five spice powder) in this creamy and smooth vegan Keto Eggnog.

Traditionally, Eggnog contains raw eggs, milk, spices, vanilla and booze. Yes, eggnog is not alcohol-free, but you can always skip alcohol based on your preference. If you must use, rum is the best choice for this recipe. Or even better, use rum extract for a very similar boozy flavor yet no alcohol. Sounds fun right!

Cooking/making eggnog: it’s true that raw egg is beaten until creamy and mixed with liquid and flavors to make eggnog. But many families prefer cooking the raw egg and make a thick-creamy custard out of it before mixing all the liquid and flavoring agents. As our recipe is vegan and doesn’t contain alcohol or egg, we will skip all these steps. Still, our vegan Keto Eggnog is super creamy and lusciously thick.

Thanks to Avocado: yes, we have raw avocado in this smoothie-like eggnog. Technically, it is a smoothie with many nutrition-rich ingredients. However, I have made it as a festive drink and kept the flavors subtle and so very eggnog-like. If you wish to enjoy vegan Keto Eggnog smoothie, just add a scoop of your favorite(preferably vanilla)protein powder before blending it.

Recipe: Vegan Keto Eggnog

Soak and Peel Almonds:

  • For making the vegan keto eggnog, you will need ¼ cup of almonds soaked for a few hours or overnight.
  • Once the almonds are ready, peel them and keep them ready. You will need 2-4 tablespoon of peeled almonds for this recipe.

Prep Ingredients:

  • For making the eggnog, you will need 1 small-sized avocado, 1 teaspoon sugar-free sweetener of choice, ¼ teaspoon ground  nutmeg, a pinch of five-spice powder and ¼ teaspoon of ground cinnamon.
  • Cut the avocado and discard the seed. Take the pulp for this recipe.

  • I used store-bought almond milk for this recipe. You can also use homemade nut milk such as flax milk or walnut milk for this recipe.
  • You will need 2 cups of almond milk for this recipe. Feel free the dilute the drink with more nut milk to get the right consistency based on your preference.

Blend Everything:

  • Take all the ingredients in a Cosori blender jar.
  • Use the "Auto Blend" function to blend the mixture into a smooth and creamy drink.

  • Pour the vegan eggnog in serving cups or glasses.

  • Top with ground nutmeg, cinnamon and chocolate syrup(optional).
  • Serve your Vegan Keto Eggnog cold.
  • Store the drink in refrigerator for 24 hours.

  • ½ Avocado
