Whether you’re hosting a little get-together or just want to prepare an easy yet elegant-looking meal for someone, this recipe is perfect. 

Super delicious stuffed bell peppers

All you’ll need is some bell peppers and a few pantry staples to put it together- it just doesn’t get easier than this.

Ingredients For the Recipe

You’ll need two sets of ingredients to make the stuffed bell peppers. 

For the minced chicken and rice

  • Oil: 1 tbsp
  • Garlic (minced): 2 tbsp
  • Onions (finely chopped): ½ cup
  • Chicken (minced): 1.5 cups
  • Salt: ¼ tsp
  • Pepper: ¼ tsp
  • Mixed Italian herbs seasoning: ½ tbsp
  • Paprika powder: ¼ tsp
  • Rice (cooked): ½ cup

For the stuffed bell peppers

  • Bell Peppers (cut in half): As required
  • Prepared stuffing
  • Parsley (chopped): For garnish
  • Sour cream: For garnish

How to Make the Stuffed Bell Peppers

Once you have all the ingredients ready, here’s what you’ll need to do next to make the stuffed bell peppers. 

Heat oil in a pan. Add garlic and saute for 30-40 seconds.

Next, add in the onions and saute for a minute or two.

Add the chicken next and mix well. Saute for 4-5 minutes. Keep cooking until the chicken is almost 80 percent cooked.

Next, add the cooked rice and mix well. Keep aside. 

Pre-heat the air fryer.

Stuff the bell peppers with the prepared stuffing. 

Air fry the stuffed bell peppers at 180℃ for 20-15 minutes or until the bell peppers are cooked.

Garnish with sour cream and parsley. Serve hot.

What Else Can I Add to the Stuffed Bell Peppers?

In addition to the rice and chicken, you can also experiment with other fillings and ingredients of your choice.

How Do I Store the Leftovers?

If you ended up making more of the stuffed peppers than needed, you can store it all for later too. 
I would recommend storing the peppers and the stuffing in separate containers, ideally airtight ones to make them last longer.

Tips & Tricks to Make the Stuffed Bell Peppers

Ready to make these stuffed bell peppers? You might want to take note of these tips and tricks too. 

  • I would recommend using different colored bell peppers if you can, just to make the dish look more fancy. 
  • Use long grained rice for the recipe, and remember to wash it thoroughly to get rid of any extra starch. This will help make the rice nice and fluffy. 
  • I used ground chicken, but you could also chop up some boneless chicken finely and then use it for the recipe. 
  • You could also experiment with different seasonings if you want to. Curry powder, peri peri seasoning and Cajun spice are all good options. 
  • To lend the stuffing for the peppers a bit of extra flavor, cook the rice in broth instead of water. 
  • I topped the stuffing for the peppers with some sour cream, but you can also choose to top the peppers with some grated cheese instead. 
  • If you don’t have an Air Fryer, you could also bake the peppers at 180 degrees for 7-10 minutes until the cheese melts and the peppers start to get a bit brown on the outside.
