I guess there is no Indian household that doesn’t use ginger garlic paste in recipes. While not all curries or Indian dishes require this, but most popular and rich ones do call for a good dose of this magic paste. And trust me, the homemade ones are way better than the ones you find at the store. The best part: you can freeze them for up to six months. 

The ginger garlic paste is versatile and can be used in a variety of dishes, from curries and soups to marinades and stir-fries. It is easy to prepare and can be stored in the refrigerator for up to a week, making it a convenient ingredient for quick and easy cooking.

To make ginger garlic paste, you will need fresh ginger root and garlic cloves. The ratio of ginger to garlic can vary based on personal preference, but a 1:1 ratio is a good place to start.

Ingredients

Ginger root and peeled garlic cloves.
  • 1 cup fresh ginger, peeled and chopped
  • 1 cup fresh garlic cloves, peeled
  • 1 tablespoon vegetable oil (optional)
  • ¼ teaspoon of turmeric powder

Instructions

  1. Wash and peel the ginger root and chop it into small pieces.
  2. Peel the garlic cloves.

  1. In a blender or food processor, add the ginger pieces and garlic cloves. Add turmeric and a tablespoon of vegetable oil if desired to help the blending process.

  1. Blend the mixture until it forms a smooth paste. If the paste is too thick, add a little water to thin it out.

  1. Transfer the paste to a clean, airtight jar and store it in the refrigerator.

How to Freeze Ginger Garlic Paste?

If you have made a large batch of ginger garlic paste and want to preserve it for later use, freezing is an excellent option. Here's how to freeze ginger garlic paste:

  • Ginger garlic paste
  • Ice cube tray or small freezer-safe containers

Instructions

  1. Transfer the ginger garlic paste to a clean bowl.
  2. Scoop out the paste using a teaspoon and drop it into the ice cube tray or small freezer-safe containers.

  1. Leave about ¼ inch of space on top of the container to allow for expansion during freezing.

  1. Cover the ice cube tray or container with plastic wrap or a lid.
  2. Place the ice cube tray or container in the freezer and freeze it for 2-3 hours or until the paste is completely frozen.
  3. Once the ginger garlic paste cubes are frozen, remove them from the ice cube tray or container and transfer them to a zip-lock bag.
  4. Label the bag with the date and name of the contents.
  5. Store the bag of ginger garlic paste cubes in the freezer.

When you need to use ginger garlic paste, simply take out as many cubes as needed and thaw them at room temperature. Alternatively, you can drop the frozen ginger garlic paste cube directly into the hot pan when cooking. The frozen ginger garlic paste can last up to 3-4 months when stored properly in the freezer.
