Ingredients For the Recipe

To make the broad beans in oyster sauce, here’s all you’ll need.

  • Broad Beans: 250 grams
  • Water: 2-3 cups
  • Cooking oil: 1 tablespoon + 1 tbsp
  • Soy sauce: 1 tbsp
  • Salt: ¼ tsp
  • Stock cube (powdered): 1 tbsp
  • Sugar: ½ tsp
  • Oyster sauce: ½ tbsp
  • Corn starch: 1 tbsp
  • Water: ¼ cup
  • Garlic (minced): 2 tbsp
  • Green chillies (minced): 2 tbsp

How to Make the Broad Beans in Oyster Sauce

Once you’ve got all your ingredients ready, here’s what you’ll need to do to make the broad beans in oyster sauce. 

Wash and clean the broad beans properly in water.

Next, bring water to a boil and add a pinch of salt and 1 teaspoon of cooking oil and mix. Add the beans to this water. Let them boil for 6-7 minutes or until the beans turn soft. The cooking time for the beans will depend on the size and age of the beans. Small and young beans would take less time than the big and aged ones.

Once the beans are cooked, drain the water and let them come to room temperature. 

Then, trim away the heads and the tails of the beans. Keep them aside once done.

Take a small bowl and add the soy sauce, salt, powdered stock cube, sugar, oyster sauce, corn starch, and water. Give them a good mix.

Add the minced garlic and green chilies. Saute and stir for 30-40 seconds or until the raw aroma of the garlic disappears.

Add in the boiled beans next and saute for a few seconds.

  • I used fresh broad beans for this recipe, but if you want to, you could start off with the frozen variety too. 
  • Just remember that frozen broad beans will take slightly longer to cook than the fresh version. 
  • Corn starch is meant to thicken the sauce, but if you don’t have it at hand, you could use arrowroot powder instead. 
  • To lend an extra bit of heat to the dish, you can also add some Sichuan peppercorns and chopped red chilies. Start by adding a little and keep tasting to ensure that the dish doesn’t get overly spicy. 
  • Chopped scallions can be another great addition to this dish. Use the whites in the stir fry and the greens as the garnish. 
  • To lend this dish the perfect Asian flavor, start with some sesame oil instead of your regular cooking oil.
