Keto Flax Paratha/Wrap

Keto flax paratha is low in calorie, low carb and super easy to make. And it's not hard on your pocket too. Unlike almond or coconut flour rotis, these don’t taste dry and flaky. Instead these hold their shape perfectly and taste absolutely YUM!

This is a multi-purpose dough recipe. You can use these as flat bread or wraps, and add herbs and spices to make yum tortillas or Indian style roti or Parathas.

Keto flax paratha is thin, actually super thin just like India rotis. It tastes great with curries or as a wrap with some hearty veggie and protein filling.

Keep it plain or add some spices, chopped onions and cilantro to give it a paratha style look and taste. I don’t add oil or fat while cooking these Keto flax Parathas. But you can  always do depending upon the lifestyle and macros you follow in your diet goal.

For this recipe, I have taken brown and golden flax meal. The rotis made with gold flax meal taste better than that of brown. However, I never make flax rotis without any added spices and herbs. If you are taking only brown flax meal, then make sure to add some flavor agents such as spices, nutritional yeast, curry powder or seasonings of your choice to give it a palatable flavor.

Cooking flax meal until a dough is formed is one best way to roll the dough to a thin paratha or roti. Making the dough with boiling water is another way to make a stiff yet workable dough. However, I like the first method the most.

Recipe of Keto Flax Paratha:

Step-1: Make the flax meal:

  • Grind a cup of flax seed in a coffee or spice grinder until a coarse powder is formed.

Step-2: Prepare the dough:

  • In a saucepan, preferrably non-stick, bring a cup of water to boil.
  • Add salt and spices of your choice. I added ½ teaspoon curry powder.
  • In a bowl take 1 cup of flax meal and ¼ cup nutritional yeast. Add a pinch of salt/pink salt.

  • Mix well until the mixture thickens.
  • Use a silicon spatula to scrape around the edges of The pan.
  • Cook until the mixture becomes doughy and leaves the pan.
  • Allow the dough to cool.

Step-3: Add herbs and onion:

  • Take the dough in a bowl. Add two tablespoon of chopped red onions and finely chopped cilantro. You can also add grated ginger, minced garlic,  and chopped green chilies at this point. I added ½ teaspoon garlic salt because my dough was less salty.

  • Mix well and knead the dough a bit. If needed, take a tablespoon or almond or coconut flour to make the dough smooth and well combined with herbs and veggies.

Step-4 Make Rotis/Parathas:

  • Take small lemon size dough ball and place it between two parchment papers. if using wax papers, ensure to grease it.

  • Roll the ball into thin roti/ paratha and carefully transfer it to a hot griddle.

  • Cook until both the sides brown well.
  • Second method: place the dough ball on the hot griddle and with the help of a silicon spatula spread the dough to a thin disc like roti or paratha.

  • Cook until the roti leaves the pan or griddle and becomes brown around the edges.

  • Serve with chutney, curry or sautéed veggies.

These are quick, super-easy and freezable. My low-carb keto flax paratha just requires three ingredients and some optional ones if you need a spicy and yum Indian-style paratha.

Ingredients

  • 1 cup Flaxseed ground into a meal
  • 1 cup water/broth
  • A pinch of salt

Additional optional ingredients

  • 2 tablespoon chopped onion
  • 1 tablespoon chopped cilantro
  • ¼-1/2 teaspoon curry powder
  • ½ teaspoon garlic salt
  • ¼ cup nutritional yeast

Instructions

Notes

  • Use boiling water while making the dough.
  • You can shape the roti by using a roundpan lid too.
  • Use oil while cooking the roti/paraths if you want.
  • Keto flax parathas or the dough can be stored well in refrigerator for 3 days and in freezer for a month.

    Have you tried storing the dough in the refrigerator ever? I tried using seran wrap and it came out too dry in 2 days. Wouldn't roll:(

      I do store it in refrigerator every time. I suspect your dough has become too dry in refrigerator. I would keep it outside for at least an hour and knead it with little more hot water before rolling if the dough becomes too tight. Hope it helps.
