Chicken with Seasoned Rice

Ingredients

Ingredients for the chicken

  • 300 grams Chicken
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper Powder
  • 1 teaspoon Paprika Powder
  • 2 tsps Onion Powder
  • ½ teaspoon Garlic Powder
  • 2 tbsps Oil
  • 1 tablespoon Garlic minced
  • ½ tablespoon Green Chilies minced
  • 1.5 cups Onions sliced
  • 1 cup Bell Peppers julienne
  • 1 cup Tomato Puree
  • 1 tablespoon Mixed Herb Seasoning
  • 1 cup Chicken Broth

Ingredients for the rice

  • 1 tablespoon Butter
  • 1 tablespoon Garlic minced
  • ¼ cup Corn kernels boiled
  • 1 tablespoon Mixed herb seasoning
  • ½ teaspoon Salt
  • 1.5 cups Rice cooked
  • 1 sprig Parsley chopped for garnish

Instructions

  • Take a mixing bowl and add the chicken along with salt, black pepper powder, paprika powder, onion powder, and garlic powder. Mix well with the chicken. Make sure each and every piece is properly coated with teh spices.
  • Next, heat oil in a non-stick pan. Add the garlic and green chilies and saute for 45 seconds.
  • Add the onions and the bell peppers. Stir and cook for 3-4 minutes or until the onions turn translucent.
  • Next, add in the tomato puree and mix well. Let the curry simmer for 5-6 minutes.
  • Add the marinated chicken next and mix. Saute and cook the chicken for 8-10 minutes.
  • Add mixed herb seasoning and saute.
  • Add chicken broth and let the curry come to a boil and then lower the heat and let it simmer for 5 minutes. Cook until the chicken is completely cooked.
  • Next, for the rice, heat butter in a pan. Add garlic and onions and saute. Stir and cook for 2 minutes.
  • Add in the vegetables next and maxi well. Saute and cook for 3-4 minutes. The vegetables should be cooked enough but still retain their crunchiness.
  • Add in the mixed herb seasoning and salt next and mix well with the vegetables.
  • Next, add the cooked rice and give everything a good mix. Lower the heat while you are mixing the rice.
  • Serve the rice hot with the delicious chicken curry and garnish with parsley.
