Vegan Keto Chai Hot Chocolate

Presenting my version of Vegan Keto Chai hot chocolate, with a dash of heat from the spices, richness from chocolate and creamy coconut aquafaba whipping cream. Try it with an extra dollop of cream and some chocolate sauce, and enjoy!

Ingredients

Hot Chocolate

  • 2 ½ cups Almond Milk(unsweetened)
  • 2-4 tablespoon Unsweetened cocoa powder
  • ½ teaspoon Chai Spice
  • ½ tablespoon Swerve
  • 1 Scoop chocolate protein powder (optional)

Coconut Whipped Cream

  • 1 cup coconut cream (Full-fat)
  • ¼ cup aquafaba
  • ¼ teaspoon cream of tartar
  • ¼ teaspoon almond extract
  • 1 teaspoon powdered swerve

Instructions

Prepare Chai Spice Mix for Hot Chocolate

  • Well, you can skip this step if you have chai spice readily available. If not, follow these steps.
  • Prepare chai spice mixture by taking these following ingredients.
  • Add 1 teaspoon ginger powder, ½ teaspoon cardamom powder, ¼ teaspoon of clove, nutmeg and cinnamon and a pinch of black pepper powder. Mix well and store in an airtight glass jar.

Step-1: Prepare Hot Chocolate(Two Ways)

  • In a saucepan, take two and half cups of almond milk.
  • Add four tablespoons of unsweetened cocoa, half tablespoon swerve, ½ teaspoon chai spice and mix well.
  • Allow to mixture to simmer and bring it to a boil.
  • Or, Take two and half cups of warm almond milk in a blender jar.
  • Add four tablespoons of unsweetened cocoa, ½ to 1 teaspoon of chai spice and half tablespoon swerve, and blend the mixture until creamy and frothy.
  • Optional, but highly recommended: blend in two tablespoons of melted unsweetened dark chocolate for a richer flavor.
  • KETO: while this hot chocolate is keto-friendly, you can make it more keto by adding 1 teaspoon hemp/avocado or MCT oil, 1 scoop of protein powder, preferably chocolate flavored, and coconut cream.

Step-3: Make Coconut Whipping Cream

  • In a bowl, take 1 cup of full-fat coconut cream, ¼cup aquafaba, and ¼ teaspoon cream of tartar. Add in ¼ teaspoon of almond extract and 1 teaspoon of swerve.
  • Whisk well till the cream forms soft peaks.

Step-4: Serve Vegan Keto Chai Hot Chocolate

  • Pour chai spiced hot chocolate in mugs and top with whipped cream, marshmallow(if you want) and cocoa nibs or morsels.
  • If you still want it more chocolatey( just like me), top with two tablespoons of chocolate sauce before serving
