To make sure the rice is nice and fluffy, rinse it well to get rid of the extra starch and cook it just until it is all done.
If your curry has ended up too runny, allow it to reduce on low heat.
You can use practically any cut of chicken for this recipe, but I would recommend using boneless thighs to get the most juicy and tender cuts.
