Soya bean Curry with Brown Rice

Ingredients

  • 1.5 cups Soya beans (soaked in water overnight)
  • 2 tablespoon Mustard oil
  • 1 teaspoon Mustard seeds
  • 1 bunch Curry leaves
  • ½ cup Onion (chopped)
  • 1 tablespoon Green chilies (chopped)
  • 1 tablespoon Ginger garlic paste
  • ¼ cup Tomatoes (chopped)
  • ½ teaspoon Turmeric powder
  • 2 teaspoon Red chili powder
  • 2 teaspoon Coriander powder
  • 1 teaspoon Aamchur powder
  • 2 teaspoon Salt
  • ½ cup Water
  • 1 bunch Coriander leaves (chopped for garnishing)

Instructions

  • Cook the soaked soya beans until they are easily mashable.
  • Next, heat oil in a pan. Add the mustard seeds and the curry leaves.
  • Add the chopped onions and green chilies next. Saute until they turn translucent.
  • Add the ginger garlic paste next and mix well.
  • Add in the chopped tomatoes next and saute for a minute.
  • Add in the spices next and saute for a minute.
  • Next, add in the cooked soya beans and mix.
  • Add water and mix. You can either increase or decrease the quantity of water as per your desired consistency.
  • Garnish with chopped coriander leaves.
  • Serve hot with cooked brown rice.
