In an instant pot safe pot-in-pot or glass bowl add all the ingredients and cover with the aluminum foil.
Add 2 cups of water in the inner pot of the instant pot and place a trivet.
Place the bowl on the trivet and close the lid. Seal the vent.
Select the pressure cooking mode and set the time for 3 minutes.
After the beep, wait for 10-minutes and then open the lid.
Carefully remove the bowl and remove the foil cover.
Use a spoon or a whisker to mix the ingredients really well until the cocoa powder and sweetener melts in the cocoa/cacao butter.
Add mix-ins, nuts, chips or nibs. Mix well.
Pour the cocoa mixture into chocolate or candy molds.
Place in the refrigerator for an hour to chill.
If not using molds, pour the mixture onto parchment paper to make bark/chocolate clusters.
