Ingredients

  • ½ cup 100g cacao butter
  • 6 tablespoon cocoa powder unsweetened 48g
  • 4 tablespoon powdered stevia 32g
  • Toppings - chopped nuts seeds, cocoa nibs

Instructions

Instant Pot Method

  • In an instant pot safe pot-in-pot or glass bowl add all the ingredients and cover with the aluminum foil.
  • Add 2 cups of water in the inner pot of the instant pot and place a trivet.
  • Place the bowl on the trivet and close the lid. Seal the vent.
  • Select the pressure cooking mode and set the time for 3 minutes.
  • After the beep, wait for 10-minutes and then open the lid.
  • Carefully remove the bowl and remove the foil cover.
  • Use a spoon or a whisker to mix the ingredients really well until the cocoa powder and sweetener melts in the cocoa/cacao butter.
  • Add mix-ins, nuts, chips or nibs. Mix well.
  • Pour the cocoa mixture into chocolate or candy molds.
  • Place in the refrigerator for an hour to chill.
  • If not using molds, pour the mixture onto parchment paper to make bark/chocolate clusters.
  • Enjoy!

Stovetop Method

  • Take a medium saucepan and melt the cacao butter under medium heat while stirring continuously.
  • After the butter melts, add the cocoa powder and powdered sugar-free sweetener.
  • Stir until combined.
  • Add any mix-ins and stir well.
  • Pour the mixture into candy or chocolate mold to make the low carb chocolate in desired shapes.
  • Chill to harden and enjoy!

Notes

  • Use nuts, seeds, rice crispies and cocoa nibs as toppings.
  • Flavor your chocolate with your favorite filling and fruit jellies.
