Air Fryer Samosa {keto}

Some keto or low-calorie air fryer samosa to satisfy your fried fritter cravings? Sounds awesome, doesn’t it? Finally, I have the easiest(yes, no dough making or rolling) air-fryer samosa, which is also low-carb and yet super yum. Presenting my low-carb samosa recipe made in the Cosori Wi-Fi air fryer.

Equipment

Ingredients

  • 6 Cups Cauliflower rice (raw) (or 4 cups chopped cauliflower florets)
  • 1 Cup Chopped green beans
  • ½ Cup Chopped red onions
  • 4-6 green chilies chopped
  • 2-inch ginger peeled and grated
  • salt and pepper to taste
  • 1 teaspoon curry powder
  • 1 tablespoon coriander powder
  • ½ teaspoon chili powder
  • ½ teaspoon dry mango powder
  • cilantro to garnish
  • 1 teaspoon oil and water or aquafaba if oil-free
  • ½ teaspoon panch phoron or cumin and mustard seeds mixed
  • Optional – roasted peanuts or cashews

Wraps

  • 1 pack Coconut Wraps (Not coconut tortillas)(contains 5 wraps) (or 5 Phyllo/Filo Sheets if not low-carb)
  • Oil to brush

Instructions

Make Stuffing Masala

  • Heat a pan and add a teaspoon of avocado or any cooking oil. If you wish to avoid oil, just heat the pan till it’s hot.
  • Now add the panch phoron or cumin and mustard seeds and allow them to splutter.
  • Now add ginger and allow the herb to infuse in the oil.
  • If not using oil, add aquafaba or water to allow the ginger to release its flavors.
  • Now add spices, green chili, and add all the veggies. Mix well to combine.
  • Cover and cook till the veggies are soft and mix the mixture in regular intervals to avoid burning at the bottom of the pan.
  • Add salt, pepper and cilantro and roasted nuts if using.
  • Use a spatula to lightly mash the veggies and cook till the mixture is dry and no water is left.
  • Instant Pot Method: Set the instant pot to a sauté mode, add oil followed by seeds and allow to splutter. Add ginger and sauté well. Now add all the veggies and spices, salt and close the lid and set pressure cook for 0-minutes. As the pressure valve starts to rise, switch off the instant pot, and wait for five minutes and then open the lid. Set the instant pot to sauté button again and cook the mixture till the water dries out. The masala is ready.
  • The stuffing is ready to use for making samosas. Allow the mixture to cool down before using it to make samosas.

Make Samosa

  • Take the Coconut wraps out of the refrigerator and allow them to come to the room temperature before using them in the recipe. If using Filo or Phyllo wraps, then thaw them in refrigerator overnight and keep them in room temperature for an hour before using.
  • Coconut wraps are usually made from the flesh of coconut and dehydrated coconut. These wraps and super thin and can be used in wraps, rolls and even samosas.
  • Lay the wrap flat on a baking sheet. Use a pizza cutter to cut the wrap into two thin strips. If your coconut wrap feels dry, spray with water and wait for few minutes and then cut.
  • Now add a spoonful of the cauliflower mixture to one end. Fold the edge over to make a triangle and keep folding it slant-wise yet vertically till you have a mini-tringle samosa ready.
  • Use some water to seal the edges of the samosas. Use the remaining coconut wraps to make samosas and set aside. If using phyllo or filo dough wraps, spray or brush some oil to keep the samosas moist.

Air Fry

  • Preheat the air fryer at 350F for 5 minutes.
  • Line the inner basket with a parchment paper and add coconut wrap or phyllo samosas.
  • Air fry for six minutes and then turn and air fry for 4 more minutes till the edges are nicely brown and the samosas are super crispy.
  • Serve the air fryer samosas warm and with some cilantro chutney or spicy red-tomato chutney. Enjoy.

Notes

  • Sometimes coconut wraps may brake while making samosas. That usually happens if the wraps are dry. I spray the wraps with water before working with them, which makes it easy to fold and make a triangle. If making a shape out of the tortillas become difficult, roll them as spring rolls and seal the edges before air frying.
  • These samosas stay crisp for an hour. If making in advance, don't store them in a container. Instead, let them stay on a cookie sheet and air fry for another 3 minutes before serving. They crisp up really well and taste the best when heated in an oven or air fryer.
