Vegan Keto Eggnog

Ingredients

  • ½ Avocado
  • 1-2 cup Almond milk
  • 2-4 tablespoon Blanched almonds
  • ¼ teaspoon nutmeg powder
  • ¼ teaspoon cinnamon powder
  • A pinch of Five Spice powder
  • Sugar-free sweetener to taste

Instructions

  • For making the vegan keto eggnog, you will need ¼ cup of almonds soaked for a few hours or overnight.
  • Once the almonds are ready, peel them and keep them ready.
  • For making the eggnog, you will need 1 small-sized avocado, 1 teaspoon sugar-free sweetener of choice, ¼ teaspoon ground nutmeg, a pinch of five-spice powder and ¼ teaspoon of ground cinnamon.
  • Cut the avocado and discard the seed. Take half the pulp for this recipe.
  • I used store-bought almond milk for this recipe. You can also use homemade nut milk such as flax milk or walnut milk for this recipe.
  • You will need 2 cups of almond milk for this recipe. Feel free the dilute the drink with more nut milk to get the right consistency based on your preference.
  • Take all the ingredients in a Cosori blender jar.
  • Use the "Auto Blend" function to blend the mixture into a smooth and creamy drink.
  • Pour the vegan eggnog in serving cups or glasses.
  • Top with ground nutmeg, cinnamon and chocolate syrup(optional).
  • Serve your Vegan Keto Eggnog cold.
  • Store the drink in refrigerator for 24 hours.
