Ingredients

  • 1 tablespoon Oil
  • ½ teaspoon Cumin seeds
  • ¼ teaspoon Fenugreek seeds
  • ½ teaspoon Carom seeds
  • ½ teaspoon Nigella seeds
  • 1 Dry red chilies
  • 1 Bay leaf
  • ½ cup Onions (sliced)
  • ½ cup Potatoes (chopped)
  • 1 cup Beans (chopped)
  • 2 cups Spinach (chopped)
  • 1 medium Tomatoes (roughly chopped)
  • ½ teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Salt
  • 3 tablespoon Kasundi (mustard sauce)

Instructions

  • Heat oil in a pan. Add the cumin seeds, fenugreek seeds, carom seeds, nigella seeds, dry red chilies, and bay leaf. Saute for 30 seconds.
  • Next, add the onions, potatoes, and beans. Let them cook for 1-2 minutes.
  • Add the spinach next and mix well. Let the mixture cook for 2 minutes.
  • Add the tomatoes next and let them cook for 30-40 seconds.
  • Add the powdered spices and salt and mix well.
  • Next, add Kasundi and mix well. Let it cook for a few seconds.
  • Serve hot as a delicious side dish to your meals.
