Take a blender and add the onions, garlic, dry red chilies, tomatoes, tamarind paste, cumin seeds, and salt. Add 2-3 tablespoon of water and blend into a smooth paste.
Next, heat oil in a pan. Add the mustard seeds and curry leaves and let them crackle.
Add the blended paste and mix well. Let it cook for 3-4 minutes. Keep it aside once done.
Heat a flat tawa or a dosa pan. Drizzle some oil. Take one ladle scoop of the dosa batter and spread it out in circular motions. Let it cook for a minute.
Spread the prepared garlic chutney on top of the dosa.
Break an egg next and spread it all over the dosa. Fold in the parts of the egg that have spilled away from the dosa into the dosa.
Flip the dosa and cook the other side for 1 minute.
Repeat the same steps for the other dosa.
Serve hot with sambar and chutney of your choice.
