Ingredients

  • 2 cups fresh Thai basil leaves
  • 2 garlic cloves chopped
  • ¼ cup unsalted peanuts
  • 2 tablespoons green curry paste
  • ½ teaspoon of yellow curry powder
  • ¼ cup extra-virgin olive oil
  • 1 tablespoon fresh lime juice
  • Salt to taste

Instructions

  • In a food processor, add the Thai basil leaves, garlic, peanuts, and green curry paste. Pulse until coarsely chopped.

  • Add in the olive oil and lime juice and process until the pesto reaches a smooth consistency.

  • Taste and add salt as needed.
