Ingredients

  • 2 medium-sized beetroots peeled and grated
  • 1 cup mixed veggies carrots, green beans, peas, cauliflower, chopped
  • ½ cup roasted and crushed peanuts
  • ½ cup boiled and mashed potatoes
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • ½ teaspoon turmeric powder
  • ½ teaspoon garam masala powder
  • Salt to taste
  • 2 tablespoon oil
  • 1 cup breadcrumbs
  • Cooking spray

Instructions

  • Preheat the air fryer at 375°F for 5 minutes.
  • In a mixing bowl, combine the grated beetroots, mixed veggies, roasted and crushed peanuts, boiled and mashed potatoes, ginger-garlic paste, cumin powder, coriander powder, turmeric powder, garam masala powder, salt, and oil.

  • Mix well until all the ingredients are well combined.
  • Divide the mixture into equal portions and shape them into cutlets.
  • Dip each cutlet in breadcrumbs, making sure it is coated well on all sides.

  • Spray the air fryer basket with cooking spray and place the cutlets in a single layer.

  • Spray the cutlets with a little cooking spray and air fry for 15-20 minutes, flipping them halfway through, until they are golden brown and crispy on both sides.
  • Serve the air fryer veggie cutlets hot with ketchup or chutney.
