Rinse the Mayocoba beans and remove any debris or broken beans.

Add the beans to the Instant Pot and pour in 3 cups of water.

If desired, add salt and a bay leaf to the Instant Pot.

Close the Instant Pot lid and set the valve to the sealing position.
Select the "Manual" or "Pressure Cook" setting and set the timer for 25 minutes on high pressure.
Allow the Instant Pot to release pressure naturally for at least 10 minutes after the cooking time is complete.
If there is still pressure left in the Instant Pot after 10 minutes, carefully release the remaining pressure using the quick-release method.
Open the Instant Pot lid and check the Mayocoba beans for doneness. They should be tender and cooked through.
Drain any excess liquid from the beans and serve as desired.
