Ingredients

  • 1 cup dried Mayocoba beans
  • 3 cups water
  • 1 teaspoon salt optional
  • 1 bay leaf optional

Instructions

  • Rinse the Mayocoba beans and remove any debris or broken beans.

  • Add the beans to the Instant Pot and pour in 3 cups of water.

  • If desired, add salt and a bay leaf to the Instant Pot.

  • Close the Instant Pot lid and set the valve to the sealing position.
  • Select the "Manual" or "Pressure Cook" setting and set the timer for 25 minutes on high pressure.
  • Allow the Instant Pot to release pressure naturally for at least 10 minutes after the cooking time is complete.
  • If there is still pressure left in the Instant Pot after 10 minutes, carefully release the remaining pressure using the quick-release method.
  • Open the Instant Pot lid and check the Mayocoba beans for doneness. They should be tender and cooked through.
  • Drain any excess liquid from the beans and serve as desired.
